:confused: My Aunt Nell used to put sugar on a table spoon and held it over the gas till it burned black. ??????? Jean. :confused:

I do a lot of cooking at home, I love cooking when I make rabbit stew or beef stew and I need to make my own colouring I burn some sugar on a spoon or in a pan. Then when it turns black I extinguish it with water giving me a very dark colouring. You can make your gravy dark in this way too. Here in Belgium you can buy ‘Buismans’, which is ground burnt sugar, the Dutch use it a lot mixed in with ground coffee to make it stronger without using too much coffee. You only need a very small amount, too much is very bitter.

PS, DON'T burn sugar in a confined area as the fumes will knock you out cold! If you have an extractor turn it on full.
 
;)Cadeau. Thanks for that. I said to my husband it had something to do with gravey but like most men thet wouldn't have a clue. I can't moan he does anything and everything about the house apart from cooking. I do a rabit stew but I get the rabits free from Petes mate Bill the farmer. We also get partridge pheasant and grouse. Wild duck also but I prefer to see them swimming on ponds. Ratbag. Your piza reminds me of the one my daughter in law cooked. We fed it to the plant when she was not looking. She loves house work and would rather clean loos than cook. It works out well as my son Pete loves doing the cooking. Does his own soups and cauliflour cheese. TTFN. Jean. :taste
 
That sounds about right with the burning sugar, etc. Back in the "old days" there wasn't as many cooking aids and people had to devise their own ways
of complementing a dish for colour and flavour. Interesting to see the
burnt sugar thingy back again. Thanks.

I think Queen's Gravy Salt is made from sugar. My mom used to use it if she ran out of Bisto.

Added two to my beef stew the other day. Shut my eyes and I can still smell that sugar burning on the spoon. While she was doing that I can still see my uncle Harry sharpening his cut throat razor on a leather strap. TTFN. Jean.:backstab:
