Watercress sauce.

This sauce is lovely with Salmon. (fresh or tinned)

~~~~~~~~~~~~~~~~~~~~~~~~~~~

Watercress Sauce

1 tbsp. OLIVE OIL
1 finely chopped ONION
1 bag of WATERCRESS (from supermarket)
4 tbsps. WHITE WINE (not too sweet)
1 small tub CREME FRAISH
50g.chilled BUTTER

1. Heat the oil in a pan and cook the onion for about 4 mins. until soft.

2. Add the watercress and cook until it wilts, about 3 mins.

3. Add the wine and bring to the boil for a few seconds.

4. Add the creme fraish and cook for a further 2 mins.

5. Pour the mixture into a blender and blend until smooth.

6. Just before serving, whisk in the chilled butter.



NB.
Any sauce left over keeps in the fridge for about 3 days, just heat through again to serve.

(I served my left-over sauce up for tonights meal with a tin of salmon that I'd put in the fryingpan to heat through thoroughly, just in a tablespoon of Olive oil.
It was in pure desperation, :D because I couldn't think of anything else!)

I tried your recipe and it was really delicious, but what a mess I made first I went to get the ingredients and got fromage fraie instead of creme fraish so I had to go back to the shop, then I realised I hadn't got a blender, so I thought I'll use a whisk, Oh my goodness what a mess my jumper my jeans the tiles, everything splatered, chopped it the best I could with a knife, got there in the end. Thank you.
 
Oh my gosh! I shouldn't laugh :D but you're not the only one to get in a mess mariew.

I've only made it once so far and that was last Sunday.
I put the stuff in the blender, and then stupidly I put my finger over the tiny hole it the lid...but only because I thought it would all shoot out if I didn't...
well, it did anyway and in hindsight I should have left well alone!
So because the air couldn't get out, it forced the mixture up and out from the sides of the lid........it just exploded all over everywhere, but everywhere!!! :shocked:
thankfully there was more than enough left to use.
 
I couldn't stop laughing when I done it, I might have known it would go everywhere, anyway I'm glad I'm not the only one who did it, but it was worth it for the lovely dinner.
 
I've just bought a pile more salmon from Sainsbury's this morning.
This week instead of 4 per pack they had smaller packs of fresh salmon on offer, 2 fillets per pack @3 packs for £10.00

So guess what any future visitors will be getting ;)
 
Snap that where I got my salmon from, but I got the pork chops and chicken, all 3 for a tenner, good offer.
