One of my mother's favourite recipes that the whole family enjoys. Easy to make and even older kids will enjoy making them as well.
Toffee Bar Recipe
Ingredients
4 ozs. Butter*
4 ozs. Brown sugar (demerara makes the mix crunchier)
1 Egg yolk
2 ozs. Plain flour
2 ozs. Porridge Oats
Instructions
Grease Swiss Roll tin.
Set oven to 190 deg C.
Beat butter, sugar and egg yolks until smooth.
Add flour and oats.
Press mixture into tin and bake for 15-20 minutes.
Cool slightly.
Topping
3 ozs. Plain chocolate
1 oz. Butter
1 oz. Chopped walnuts (optional)
Instructions
Melt butter and chocolate and spread over mixture in tin.
Cover with chopped walnuts (if required).
Cut into bars while warm, but leave in tin until completely cold.
*Note:
Use butter in the toffee bar mixture otherwise you won't get the glorious caramelised taste in the bars (nope, 'I Can't Believe It's Not Butter' doesn't work
)
