These coconut and cocoa iced cakes were named after Lord Lammington in the 1880s.

The Lamington is an Austrlian Institution!

When various organisation want to raise money they have "Lamington Drives" where they bake in amazing quantities and never have any problem selling them.

You can have a go at baking them but I bet you wont come close to the True Blue Aussie Lamington!
 
Bernie sorry I don't listen to Ed as I have to keep switching stations living here in Suffolk, but GG Jean will have something to say about him when she comes on.
 
Hi Alf - I really should read all of the post as looking back I see you got there before me.

No need to apologise for not listening to Ed as I gave up on him some years back down to WM shifting his programme times so often.

Whatever the spelling and origin they taste bloody nice! Mine are made by a friend of ours, Maureen Cowan, right here in Port Elizabeth.
By the way, I'll settle for Lamingtons!
