English Toffee

Yes, although there are few ingredients, this really works. This is a great item to provide as a gift.

Chop nuts and open a bag of chocolate chips in advance
Two lbs of sugar
2lbs butter don’t use margarine

Constantly stir the above mixture until it reaches 300 degrees (You will need a heavy duty thermometer) Use pans which have no coatings
Once the temperature has reached 300 degrees, spread the mixture into a large jelly roll pan. Immediately place your favourite chocolate chips on top of the toffee mixture, swirling with a wooden spoon to make certain it covers the entire pan. Then sprinkle chopped nuts of your choice. Almonds are fantastic

I suggest placing the pan in your freezer for a quick cool. Once the candy is cooled, break it into pieces and place it in your favorite containers for gifts or as a desert favour

Toffee.

 My mom used to make the most beautiful toffee both english and the treacle variety. It's leathel if you get the boiling liquid on your skin. I still have her little toffee hammer. TTFN. Jean.

Love the subject of English Toffee...Thornton's Chocolate Cabin.. They had
a store in Erdington High Street for decades..might still be there. There is one close to Grace Church Centre in Sutton Coldfield. They know me in that shop. There also used to be one in Stephenson Place decades ago.....across from New Street Station where I worked:)

One of our neighbours made great toffee just after the war and we would be given some from time to time.

Jean my Mom was a brilliant toffee maker as well. Big slabs as you say broken with the toffee hammer. She could make excellent toffee apples too! Oh how I miss her toffee:cry:

Some discussion about Bluebird Toffee here:
Generally there is something to be found in a BHF search.

I remember driving by the Bluebird factory in the 70's on the way from Rubery to Halesowen take the short cut through the mental hospital up and over the Beaches past the copse that could be seen for miles the it was at the bottom of the hill

Back in the 70s, when we were going on leave from Germany, Brummies in my regiment would ask us to bring back Thornton's treacle toffee for them. I can't, for the life of me, remember where the shop was but the toffee was gorgeous. I've got the fillings to prove it !
