In the 1700s, the market seems to have moved around. And the storage of the cheeses was an important factor in their location (dry conditions), so I expect the market(s) would have been, usually, held inside a building. In 1763, there was a cheese market held at the Red Lion, the cheeses being stored somewhere in a warehouse. Not heard of Orange Court, High Street - presumably named after the herring and orange warehouse.
