Bubble 'n Squeak

GONE BUT NOT FORGOTTEN
Because of a shortage of money and ration books, the Sunday roast had to be made to strech as far as a yard of elastic. Monday was bubble and squeak day, with the vegetables from the day before mashed together with a slice or two of meat mixed in, and fried. I hated it, and still do, although being the good wife that I am :D I do make it for himself once in a while.

I love bubble and squeak and I,m a good cook of it as well.

I discovered recently why I am such a good bubble and squeak cook . as I explain to me dear wife .

bubble and squeak is "controlled burning "

I believe the classic ingredients of B&S are cooked mashed potatoes and sprouts, although any greens are good, as long as they're not too bulky or wet. Ideally you should fry them up in a bit of dripping, and certainly it's worth putting other things - perhaps some finely chopped onion, some herb or spice or even a clove of garlic, although I don't think my nans ever used it.
I loved it with two rashers of bacon and a fried egg.
