Anyone fancy sharpening their search skills?

I'm not sure if I'm getting confused (easy with Smiths) but I don't think any one said Walter died young. As per your op he died in WWI. There was a William who possibly died young but there are a number of possible deaths that could be his and no way to tell which (if any) is his.
The Walter you’ve all been searching for is Ernest’s brother. Ernest married Leah Ashford and their first child was called Walter. He died only a few weeks old. Walter the brother died in 1917

Yes there is a birth reg in June qtr 1904 of Walter Ernest Thomas mmn Ashford.

Death reg in Sep qtr 1904 of Walter Ernest at Aston.

I did have a quick look to see id the Wolverhampton family were related but I didn't think it was. If I'm remembering correctly I think a lot of their children appear to die young.
 
So, looking for Charles Smith birth certificate (Ernest’s Father) I couldn’t find a Charles with the MMN of Moulton or Bishton…. I even searched between 1850 and 1860…. Curious

Walter Ernest Thomas death probably registered Mar 1907 Aston, aged 2.

You can see it as a digital image on the GRO.
When I search for that I get no records found
 
I think taking at face value the Thomas marriage to Elizabeth Moulton mistake is a very easy mistake to make and one that a lot of people (me included) have made... Its aleap of faith too far. I've had a look at the Elizabeth Bishton theory and I've got to say it makes sense that Thomas and Elizabeth didn't get married and that he merely took her boy on as his own and lived as man and wife. I've used that as a placeholder in case any more info comes in but i think that's what we're dealing with. I'll just have to look harder for Thomas's family prior to this and ee what happens. Thanks to MWS & PJMBurns for their help with this i have advanced my family tree further in a month than i have in 20 years!!!!
