  • HI folks the server that hosts the site completely died including the Hdd's and backups.
    Luckily i create an offsite backup once a week! this has now been restored so we have lost a few days posts.
    im still fixing things at the moment so bear with me and im still working on all images 90% are fine the others im working on now
    we are now using a backup solution

Reading about Faggots and Peas reminded me of the old Bull Ring market (The bombed-out one), where you could by steaming hot Pigs Trotters for a tanner each. I don't think I could face 'em today, but as a kid in the late 50's early sixties they were heaven.

I've just been reading the food thread and came across this post.
Mom used to "do" trotters on a Friday night, ( tin-bath night!) They were lovely with carrots in the broth. Many years ago husband said he would like some, but I didn't realise that they should be soaked and shaved as Mom had always done that part. You can imagine how awful they were! (I am a good cook normally!)
We made real faggots one day, I sat down to lunch and I went into labour!! I haven't made them since.

Saturday nights wouldn,t have been the same when we were young without the old pigs trotters on the boil. My Mom/Dad would do a pot full and we would have them for supper with Crusty bread and butter . We loved them. I couldn,t eat anything like that now. Used to say to the butcher "Have you got pigs feet" He would reply " No love it,s just the way i walk".
 
I used to have to bone out pigs heads for a dodgy butchers sausage meat, don't think i could ever engage in that practice again either.
 
I heard this expression that you could eat every part of apig except the onk!
 
rosie..................Can you remember the recipe for the faggots your mother made? I can still "taste" the flavour of those my late mother made, they were wonderful. The bought faggots presented today are nothing like those of mothers! I seem to remember faggots contained heart, kidney, liver, lites (lung) bread crumbs, herbs all bond together in kell ( skin which I believe separated the pig's diaphragm from other parts). Most importantly all the "meat" products were cut into small pieces by knife and not through the mincer. How I looked forward to my lunch time meal after walking home from school. (no school dinners during my time!)
 
anvil man, no I can't remember the recipe but there was kell, liver, groats (I think!) and various other bits of offal!!
We used to get lites (and guggles!) for the dogs, ugh! that smell!!
I do still like roast lamb hearts but haven't bought any for ages.

brumgrum .I find the pressed and cooked meat from pigs head is delicious!! This is widely called brawn and home made always seems superior to the purchased option.. This is often a few pieces of meat floating around in a mass of gelatine and to enhance this mass a small amount of red dye is often added!!

I'm not really tempted but we used to have to scoop out the brains for a customer who said they were nice on toast.
 
brumgum Your comment about pigs brains made me reflect on a story my son mentioned after having brains on toast at my mothers. He asked my mother what exactly this brains on toast was to which she straight away replied "brains" . He actually thought it a pseudonym for something else!! I liken the taste of brains a little like soft herring roe.

my mom always ate pigs trotters, and dad always had brains on toast, ugh!... wild horses would'nt have got me to try them ..just the thought of it made me want to puke...but now l loved faggots and peas and pigs pudding so l guess to each his own...Brenda
 
To add to the eating trauma, does anyone like freshly prepared pig's tongue? I agree , with some out there, that stuffed and roast lamb's hearts are wonderful. There is one "food" I would like to try and that is chicken's feet. I used to purchase sackfulls of these to supply Chinese sailors on the oil tankers when I was a Ship Chandler in the oil port of Milford Haven. On that theme some of the strangest food to obtain was for the Japanese and on reflection I must admit I was not in the slightest tempted by much at all? It included skeletal small fish and more types of seaweed than I ever thought existed. Bring on a full English breakfast!!!!!!!!!!!!
 
I was just this minute talking to my wife about me great-grandfather,he used to eat chickens feet too!
 
I don't like the smell of chitterlings and brown sauce! Mom used to like them and brains too!
She said that when she was a child Nan would send her to the butcher for "ockerypiece" which she found out later should have "hock or eyepiece".
I didn't like making brawn, it was the teeth I didn't like touching! Tongue is OK once the skin is removed.
