Welsh Rarebit

My mom used to make Welsh Rarebit for dad – more than not often before going to bed.

Take two slices of bread, combine ½ oz. butter with ½ teaspoon of hot mustard and a dash of salt, Cayenne pepper and Worcestershire sauce.

Add 3oz. grated Cheddar cheese and 1 tablespoon beer (milk may be substituted). Toast the bread on one side only and spread the mixture on the other side - Brown under a hot grill.

Dad liked it combined with 3 oz cheddar cheese and 1 tablespoon of beer the best!

Beryl i also have mine done the same way it is the only way i live 5 miles from Cheddar Gorge and get lots of good cheddar cheese's my wife puts a drop of cider in mmmm think will have that for supper

That's great Mossy - I would like it with cider too - But a Scotsman like my husband likes. . .

\Whisky Rarebit
Ingredients
1 oz butter
6 oz grated Cheddar Cheese
1 tablespoon of Scotch whisky
dash of hot English mustard
Salt and pepper to taste
1 Egg yolk
1 egg white, stiffly beaten

Preparation
Melt 1 oz of butter in a saucepan and add 6 oz of grated, mature Cheddar cheese, 1 tablespoon of Scotch whisky, a dash of hot English mustard salt and pepper.
Stir over a low heat until the mixture has melted and is smooth.
Do not overheat or the cheese becomes oily. . . Draw off the heat and stir in 1 egg yolk. Using a spoon fold in the egg white stiffly beaten.

To enjoy life - we have to enjoy what we eat. .
 
Beryl that one sound good to me aswell,not long eatan mine but like to sprinkle a touch of extra Worcester sauce on when poured on to toast
