Welsh Bara Brith (pronounced Breeth)

Ingredients:

1 lb SR Flour
12 oz to 1lb mixed fruit
8 oz sugar (brown or white)
pinch of salt
2 tablespoons of marmalade
1 large or 2 medium eggs
1/2 pt cold tea

Method

Soak sugar and fruit in cold tea overnight

Stir in marmalade, flour and beaten eggs

This mixture fills 2 x 1lb loaf tins so if you want to test it out first then just halve the ingredients.

Bake for 1hr 30mins on Gas mark 4 or 350 f or the equivalent in centigrade - keep an eye though because ovens vary and i sometimes find that it doesn't take this long to cook.

This is delicious and can be eaten sliced as it stands or sliced and butered

Suitable for freezing
