In church records for a burial entry, for eg: William, son of ........., buried,
If one or both parents are listed, can I assume that the deceased was under full age! In other words were they under what age?

Also I have come across the term "aff" with a date, in burial registers. What does this refer to?

"Of full age" generally refers to the "age of majority. That was 21 until the 1970s.

"Aff" is likely to refer to an affidavit to do with being buried in a woollen shroud. It would depend on the date - early C18th?.

...I did some googling and found this link:

which refers to the Act of 1678 which required burial in woolen shrouds. It was a measure to protect the woollen industry.
