The pawnbroker seems unlikely. There is listed :
Ensell Nellie B. (Miss), pawnbroker, 274 Icknield Port rd. However she is listed as a Miss, and the listing starts sometime between 1909 and 1912, as she is there 1912, but not in 1908. She is still there in 1921 but by 1932 it is still a pawnbroker, but run by a different person. The electoral roll shows her as being there in 1912 and 1920, but gone by 1925. It is probably the existence of this Nellie Ensell that gave rise to the story of her becoming a pawnbroker.

Joining the American circuit would seem the most likely. I am sure I have seen a website that lists many of the "exhibits", I will see if I can refind it.
She is mentioned on https://www.showhistory.com/FatPages/fat2.html but no pic or new info apart from that she claimed to be great-granddaughter of Daniel Lambert who, if memory serves was the fattest man ever.

I think it may have been the National Fairground Archive I was thinking about at https://www.nfa.dept.shef.ac.uk/holdings/catalogue (although have a nagging feeling I've seen a similar US one). Nellie isn't mentioned as such but the Handbill holdings in 178T - Handbills in Bramwell Taylor Collection describes some of her competition (with particular ref to The Onion Fair)
