Blueberry Muffins
1.1/2 cups four
1 egg
2/3cup milk
1cup blueberries, or blackcurrants, or chopped apple
2 teaspoons of baking powder
¾ cup castor sugar
3tablespoons corn oil
Pinch salt
Mix dry ingredients together – make a well in the middle – add wet ingredients – mix well and then add fruit – fill muffin tins 2/3 full (about 16) bake at 170c for 15 –20- min’s.

2 eggs
1.1/2 cups flour
¾ cup milk
1teaspoon baking soda
2 teaspoons cream of tartar
3tablespoons sugar.
Mix all dry ingredients in a bowl – add eggs and milk - beat well, then leave to stand for about 20 min’s – do not stir but using a tablespoon drop mix into pools in a heated greased fry pan – flip over as mix turns golden brown – serve warm, or cold with jam and fresh cream topping.
