Diabetic cake

Hi all, can anyone help, I am after a recipe for a cake suitable for a diabetic, have been on the internet but they all seem to be American

Hi Denise - if the problem [with American recipes] is with the quantities you should be able to find conversions for these and also translations into proper English on the net.
 
This cake is yummy but it does not rise and is a much denser cake than a normal fruit cake, hope you enjoy it Mike

Diabetic Fruit Cake

6 Tablespoons Skimmed Milk
1 1/4 lbs Mixed dried Fruit eg raisins sultanas etc
(including dried apples,prunes,apricots,pears,dates or any favourites)
8oz Wholemeal Flour
2 Teaspoons Baking Powder
Pinch Salt
2 Eggs
1/4 pint Sunflower Oil

Pour Milk into a bowl, add the fruit and leave to soak for at least 30 mins
Grease and line a cake tin
Heat Oven Gas 3 /160c
Mix together all the dried ingredients
Beat the Eggs and the oil together in a separate bowl
Add all the dry ingredients to the oil, eggs and milk
Pour into the tin and level the surface
Bake 1 Hour
Reduce the gas to heat 2 150c for another 1/2 hour
Cover cake if neccessary while cooking
