GONE BUT NOT FORGOTTEN
It must be the cooler weather that makes me think of food, and of all the casseroles and stews ahead.

In the 60's, when money was tight and our children were babes, I was open to any new recipes that didn't cost much to make and were filling. One that I still cook for the two of us we call mince and carrots. 1lb of mince, a good sized onion a stock cube in enough water to cover the ingredients, lots of sliced carrots and finally the food I couldn't live without - potatoes, small ones left whole. Season and let it simmer on top of the cooker for a couple of hours, drain the liquid off and serve with lots of butter melting over the top. It's real comfort food for a cold day. :D
